What am I actually paying for with an OnMe subscription?

You pay for OnMe dashboard access, automation tooling, proxy-management features, infrastructure, and support. You are not buying Minecraft, Minecraft accounts, Minecoins, Marketplace content, official server access, ranks, cosmetics, or any in-game advantage — OnMe doesn't sell any of those.

Plans differ in what they unlock inside the dashboard: things like bot and account limits, server-profile limits, proxy rotation allowances, and team seats. Those limits are enforced technically, so going over one may require an upgrade before you can create more of that resource.
